La carte gaze entre mer et lumi\u00e8re sous la signature du chef triplement \u00e9toil\u00e9, qui fa\u00e7onne les plats autour des tr\u00e9sors de la mer et de ses racines bretonnes, en y glissant une subtilit\u00e9 asiatique qui \u00e9quilibre texture et saveur. Le Champagne Blanc de Blancs Grand Cru Tour d\u2019Argent, les hu\u00eetres en gel\u00e9e et les cocktails chauds de saison sp\u00e9cialement cr\u00e9\u00e9s pour les f\u00eates, s\u2019accordent avec le reflet des flots et la silhouette de Notre-Dame. Pour cette premi\u00e8re \u00e9dition parisienne, on a l\u2019impression d\u2019avoir pris le train depuis la montagne pour se retrouver face \u00e0 la <strong>Tour Eiffel<\/strong> scintillante.
