Cette utilisation mesur\u00e9e t\u00e9moigne de la ma\u00eetrise des chefs, qui ont su cr\u00e9er un \u00e9quilibre parfait entre l&rsquo;intensit\u00e9 de la <strong>truffe<\/strong> et la finesse des autres ingr\u00e9dients.<\/p>\n<p>Le voyage gustatif d\u00e9bute par un foie gras aux petits l\u00e9gumes et son <strong>bouillon truff\u00e9<\/strong>, suivi de pattes de c\u00e9leri. Une tartelette aux pommes de terre surprend par sa l\u00e9g\u00e8ret\u00e9, tandis que les Saint-Jacques s&rsquo;accordent harmonieusement avec le chou-fleur. Le bar de ligne au radis noir est un v\u00e9ritable plat d&rsquo;artiste, avec une pr\u00e9sentation qui met en valeur la cr\u00e9ativit\u00e9 des chefs. Quant au veau aux choux de Bruxelles, c&rsquo;est un v\u00e9ritable d\u00e9lice pour les papilles, se distinguant par la finesse et l&rsquo;\u00e9quilibre subtil de ses saveurs.
