Diss\u00e9min\u00e9es entre Anvers et Bruxelles, ses adresses s\u2019inspirent de concepts pioch\u00e9s lors de ses diff\u00e9rents voyages \u00e0 travers le monde, de l\u2019Afrique \u00e0 la Chine en passant par le Japon.<span class=\"Apple-converted-space\">\u00a0<\/span><\/strong><\/p>\n<h2>Des concepts pioch\u00e9s au d\u00e9tour de voyages<\/h2>\n<p>\u00ab\u00a0J\u2019ai achet\u00e9 une machine \u00e0 faire des dim sum au Japon et, quand je suis rentr\u00e9 \u00e0 Anvers, j\u2019ai ouvert une premi\u00e8re adresse dans le Mercado\u2026 ensuite, tout s\u2019est encha\u00een\u00e9\u00a0\u00bb, explique l\u2019expert en finances. En 2017, il ouvre\u00a0son premier resto chinois Sum Sum \u00e0 Anvers,\u00a0pr\u00e8s du Palais des Beaux-Arts. D\u00e9but 2018, il s\u2019associe pour cr\u00e9er La\u00a0Taqueria, concept alors inconnu dans la capitale du diamant. Ce sera ensuite au tour d\u2019un resto libanais, Sumac, suivi de\u00a0Fugu\u00a0et ses \u00ab\u00a0sushis funky\u00a0\u00bb. En 2020, place \u00e0\u00a0Tio, un bar \u00e0 tapas espagnol qu\u2019il vient de c\u00e9der tout comme\u00a0Tito,<span class=\"Apple-converted-space\">\u00a0 <\/span>un resto pour pastavores. Tous se regroupent sous un seul label, <a href=\"https:\/\/yumyum.world\" target=\"_blank\" rel=\"noopener\">Yum Yum Group<\/a>.<span class=\"Apple-converted-space\">\u00a0<\/span><\/p>\n<p>Fort de son succ\u00e8s, Raphael Helsmoortel part \u00e0 la conqu\u00eate de Bruxelles, avec une seconde Taqueria, rue Lesbroussart, et un Sumac en partenariat avec le\u00a0Plein Publiek\u00a0au Monts des Arts. Dans le m\u00eame temps, il gagne un appel d\u2019offres pour le Dikke Mee, une brasserie iconique situ\u00e9e dans le parc Nachtegalen \u00e0 Anvers. Derni\u00e8rement, c\u2019est un nouveau Sum Sum qui vient de pointer le bout de son nez en plein coeur du Cimeti\u00e8re d\u2019Ixelles. Les 8 \u00e9tablissements ont \u00e9t\u00e9 \u00e9labor\u00e9s selon des crit\u00e8res communs : espace intimiste, d\u00e9co hyper instagrammable, cuisine automatis\u00e9e pas trop compliqu\u00e9e, le tout \u00e0 base d&rsquo;ingr\u00e9dients homemade. Nous \u00e9tions parmi les premiers \u00e0 s\u2019inscrire sur Deliveroo, alors que l\u2019app s\u2019exportait tout juste des \u00c9tats-Unis. Je me suis dit que \u00e7a allait arriver ici, et que les gens allaient rapidement s\u2019adapter, on a donc imagin\u00e9 pour chaque concept, d\u00e8s le jour 1, un menu propice \u00e0 la livraison. Pour les tacos, on a mis au point des tacobox \u00e0 faire soi-m\u00eame. C\u2019est ce qui nous a sauv\u00e9s pendant le Covid\u00a0\u00bb. Durant la pand\u00e9mie, l\u2019entreprise r\u00e9alise en effet un chiffre d\u2019affaires encore plus \u00e9lev\u00e9 que pr\u00e9c\u00e9demment, uniquement gr\u00e2ce au take-away. \u00ab\u00a0On a fait en sorte d\u2019\u00eatre encore plus rapides qu\u2019avant, et on a jou\u00e9 sur les formules promos\u00a0\u00bb. L\u2019ann\u00e9e post-covid continue d\u2019\u00eatre fructueuse, jusqu\u2019\u00e0 l\u2019inflation l\u2019ann\u00e9e derni\u00e8re, o\u00f9 l\u2019indexation des loyers et des salaires, l\u2019augmentation du prix de l\u2019\u00e9nergie et de la nourriture ont fait chuter leur chiffre d\u2019affaires de 15%.<\/p>\n<h2>Un mod\u00e8le qui marche<\/h2>\n<p>Comment expliquer, dans un secteur o\u00f9 les patrons ne se paient plus, pire, d\u00e9cident bon gr\u00e9 mal gr\u00e9 de fermer la boutique, que Yum Yum perdure dans une sant\u00e9 relative ? Selon Statbel, on comptait pr\u00e8s de 1 200 faillites en 2023. C&rsquo;est\u00a013,1% de plus qu\u2019en\u00a02016. L\u2019avenir appartiendrait-il aux cha\u00eenes de restaurants fast good ?<\/p>\n<p>\u00ab\u00a0Il y a plusieurs \u00e9l\u00e9ments. D\u2019abord la proximit\u00e9 de nos adresses, ce qui nous permet de faire travailler facilement des \u00e9tudiants d\u2019un endroit \u00e0 l\u2019autre. Notre segment \u00ab\u00a0fast-good\u00a0\u00bb nous permet d\u2019employer ce type de personnel, car le co\u00fbt des salaires et des charges patronales est devenu exorbitant. Ensuite, il y a un v\u00e9ritable turn-over. Chaque concept est clairement d\u00e9fini, et permet de sortir manger pour un tr\u00e8s bon rapport qualit\u00e9-prix. \u00ab\u00a0On a essay\u00e9 de faire un concept fun, pas prise de t\u00eate, bas\u00e9 sur une nourriture pas trop ch\u00e8re et avec des cocktails sympas\u00a0\u00bb, r\u00e9sume Raphael qui conc\u00e8de n\u00e9anmoins qu\u2019on perd forc\u00e9ment un peu en authenticit\u00e9. \u00ab\u00a0Nous ne pr\u00e9tendons pas proposer de la pure cuisine mexicaine. D\u2019ailleurs, la plupart ne sauraient pas l\u2019appr\u00e9cier. C\u2019est frit, tr\u00e8s gras, tr\u00e8s piquant\u2026\u00a0\u00bb. Finalement, ce type de mod\u00e8le b\u00e9n\u00e9ficie d\u2019une \u00e9conomie d\u2019\u00e9chelle qui permet, si une adresse va moins bien, de compenser gr\u00e2ce \u00e0 une autre. Une posture qui permet d\u2019\u00eatre beaucoup plus r\u00e9sistant face aux variations du march\u00e9.<span class=\"Apple-converted-space\">\u00a0<\/span><\/p>\n<p>Ce qui n\u2019emp\u00eache pas Raphael Helsmoortel de rester prudent dans la situation \u00e9conomique actuelle. \u00ab Pour le moment, nous allons nous focaliser sur les marques que nous avons d\u00e9j\u00e0, faire grandir la Taqueria, Sumac et Sum Sum.
